Simple Seasoned Adzuki Beans

Ingredients
  

  • 1/2 cup of dried adzuki beans
  • 4 cups of water
  • 1 tablespoon of soy sauce
  • 3 bay leaves
  • 2 tablespoons of Mirin
  • 2 cloves garlic, crushed
  • Salt and pepper to taste
  • 2-3 cups of chicken or veggie stock

Instructions
 

  • Rinse the adzuki beans in cold water and discard any debris.
  • Add the beans, water, soy sauce, bay leaves, and crushed garlic in a large saucepan.
  • Pour chicken or vegetable stock and bring the combination up to a boil over medium heat.
  • Reduce the heat to low and simmer for 2 hours until the beans are tender, stirring occasionally.
  • Remove from heat and let cool slightly before seasoning with salt and pepper to taste.
  • Serve as a side dish or incorporate it into other meals. Enjoy!
