Rinse the adzuki beans in cold water and discard any debris.
Add the beans, water, soy sauce, bay leaves, and crushed garlic in a large saucepan.
Pour chicken or vegetable stock and bring the combination up to a boil over medium heat.
Reduce the heat to low and simmer for 2 hours until the beans are tender, stirring occasionally.
Remove from heat and let cool slightly before seasoning with salt and pepper to taste.
