Preheat the oven to 425°F.
Peel and slice onions into 1/4 inch rings, separate the rings and set them aside in a bowl of ice water.
In a shallow dish, mix flour with salt and pepper.
In another dish, whisk together milk and egg.
In a third dish, combine breadcrumbs with Creole spice mix.
Drain the onion rings from the ice water, and pat them dry with paper towels.
Coat each onion ring in flour mixture, then dip it into the milk and egg mixture, and finally coat it with breadcrumbs.
Place the coated onion rings on a wire rack placed over a baking sheet sprayed with cooking oil.
Lightly spray the onion rings with cooking oil.
Bake for 17 to 20 minutes, turning halfway through until golden brown and crispy.
